ORANGE CUCUMBER SALAD
½ large cucumber, sliced #4 blade, or waffle cut #5 blade
1 11 ounce (310 g) can mandarin orange sections drained
1 small green pepper, chopped (½ cup)
2 tablespoons parsley, chopped
½ cup plain yogurt
¼ teaspoon ground thyme
In mixing bowl, combine cucumber, oranges, green pepper, parsley and toss. Combine yogurt and thyme and spoon over salad mixture.
Toss lightly, cover, and chill.
